Chicken Caesar Salad

This Caesar salad caught my eye because of the extra additions of bacon and boiled egg that you usually don't find in a normal Caesar salad. It was so good! I'm thinking "crumbed" chicken means ground chicken? I just used slice up grilled chicken breast. I went a little overboard on the parmesan and you can't really see any of the topping lol. Used my own homemade dressing: My Bfs Caesar Dressing

You can grind your own chicken by cubing boneless chicken and freezing it for about 20 minutes. Use a food processor to grind the chicken. Pulse with the blade fixed to the bottom. If chicken starts smearing, freeze the chicken longer.

That's weird. I'm thinking 8 pieces of crumbled chicken means 8 slices shredded?? Regardless, nice recipe, and I love the photo. Your dressing looks awesome too!

Went to edit my spelling mistakes in my response to Points and it deleted! Anyway, I have a meat grinder I use all the time, but in chkn. Caesar I think I prefer sliced breast. Good tip on the food processor for those who don't have grinders!

Maybe it does mean shredded chicken Linda! Guess it will just be left a mystery :P. Thanks :)

That looks super delicious, Mommyluvs2cook! I think ground chicken would be weird. I like sliced chicken or at least large chunks of chicken in a Caesar salad. Love the bacon and egg addition. Good for you for making your own Caesar dressing. I've always wanted to try homemade, but I'm too intimidated by the process. I recently found a store brand I like called Bolthouse Farms. It's in the refrigerated section with the produce. Their Caesar dressing is pretty good. Nice photo!

Thanks DIZ, I agree, ground chicken would be weird for me too in a Caesar. Much prefer sliced and grilled :)
