    Creamy Irish Potato Soup by Daisy11

    This is a quick and easy soup. With simple flavors that I enjoyed, it has a clean potato taste without distraction of other spices or vegetables.
    It calls for potatoes, celery and green onions. I believe the recipe poster might have subbed the green onions for a leek, and I'd rather use a leek next time--though green onions are a great substitute! I only used the whites of the green onions in the soup and added the greens for a topping.
    For the organic chicken broth, I used Imagine brand--it's my favorite and tastes more like homemade broth than any other boxed broth I've tried. It's organic, and I believe it's available in all of North America.
    I had to use more broth while cooking the soup as there wasn't much liquid in the pot to boil the potatoes. I should have reduced the milk afterwards, but I already had the milk measured out. So, my fault for not reducing the milk. It ended up a little thinner than I liked. But still very delicious!

What kind of milk did you use? Whole or 2%. I think this would work with lactose free milk. Bookmarked.

    Wow, looks so silky smooth Shona! Leeks would be great in this, hopefully they come in season soon so they aren't so expensive. Bet a crusty bread would be perfect dipped in this :)

    I used 2% lactose free, Natrel brand.

    I forgot to mention above I used my handheld, immersion, blender. I've never pureed soups in a regular blender--knowing me that would end in disaster, lol ;)

    Yes, a crusty bread would be perfect! We only had soda crackers this time around. And the kids and hubby topped their soup with cheddar cheese and bacon bits. :)

    The soup looks lovely Shona. (Also love your wee green serviette....very Irish looking) :) Daisy11's soup is very white. I have a Potato Onion soup that I've been making for years
    Onion Soup With Pesto
    but it never turns out nearly as white.
    I always use my 'stick' blender for soups too as I also would have it everywhere I'm sure if I used a regular blender.

    Diz, I love both too! When I was a little kid I use to pull the green onions out of our garden and eat them right there--my friends thought I was weird..Lol! ;)
    Janet, my soup did look like yours before I added the milk. I also used white potatoes vs Russet or Yukon's....I'm not sure if that makes a difference?
