Ingredients

How to make it

  • HEAT butter in saucepan. Add onions and celery and cook until tender.
  • ADD broth, black pepper and potatoes. Heat to a boil. Cover and cook over low heat 15 min. or until potatoes are tender.
  • PLACE half the broth mixture and half the milk in blender or food processor. Cover and blend until smooth. Repeat with remaining broth mixture and remaining milk. Return to saucepan. Heat through

    What a great, easy, quick potato soup! I love the simple, clean flavor of the soup. I only used the white's of the green onion in the soup and the greens for garnish. Next time I'd like to use a leek. I also think you need slightly more chicken broth and less milk, so I 'd start with 2 cups broth and see how much you need for boiling the potatoes and reduce the milk accordingly.
