Crockpot Zucchini

    Crock Pot Zucchini by Hungrybear

    Originally I was looking for a zucchini-carrot casserole recipe. My MIL use to make one that my Dh's family just loves. I haven't made it in forever and thought with the stuffing in it, it would make for a perfect Thanksgiving side dish. I came across a few recipes on here that look almost identical to my MIL's and narrowed it down to these two: Southern Squash Casserole and Zucchini Casserole
    But as I was getting the turkey in the oven yesterday, I realized that with the different oven temperature's I wouldn't be able to bake them at the same time. So, last minute I found this Crock Pot Zucchini recipe that has the same ingredients as the baked versions except for the flour. The flour made sense since it's in the crockpot for a few hours and the moisture doesn't evaporate. And the other major difference was that you didn't pre-cook the zucchini. I thought with the long cook time in the crockpot that it would be ok.
    I was pleasantly surprised that it got crispy around the edges and a little on the top. I was expecting softer stuffing than the oven baked version. And the zucchini and carrots were completely cooked through. I was worried it might get soggy, but the flour absorbed the moisture--however it absorbed way too much! Next time I would leave out the flour or at least cut it in half.
    Overall the texture just wasn't as good as the baked version, but that might be due to the added flour. Next time I will try it without. I love that you can make this casserole in the crockpot, especially if your cooking a big feast for company! For the 4 of us it made plenty, we have just over half left-- so it can easily serve 8 people as a side dish.

    I looked at the ing. but the sour cream is not for me. I tried the dairy free sour cream
    and i don't care for it. I wonder if lactose free Greek yogurt would work?

    Yes, yogurt would work. I've also seen this dish with mayo, but I'd use half yogurt and mayo in this as all mayo might be too rich. I think my MIL used half sour cream and mayo, and she baked it in her round stoneware crock pot. I swear that pot always made it taste better! ;)

    Wow, great pictures Shona! Who'd think that zucchini could do a long cook in the crockpot without over cooking. Learned something today about that. The recipe looks great and glad it worked out. I know what you mean about coordinating dishes so they are all done at the same time when the oven is set for one temperature and you need another temperature setting for another dish.

    I forgot to mention above, but mentioned it on the recipe review page, that I cooked it for two hours on high and two hours on low. That way it cooked for 4 hrs, the same as my turkey. That seems to be the magic number for my crockpot, 2 on high and 2 on low for almost everything I make in it! ;)

    What a neat crockpot recipe Shona! Good call on not cooking it the full 7 hrs. Too bad it was dry, but I think you figured it out by not adding the flour next time. Was the flavor really good regardless of the texture? Nice pictures :)

    Yes, it tasted great! Lol, forgot to mention the taste! My Mil first made this for me 20 yrs ago, and I was never a fan of zucchini before that so this changed my mind. Many people think there is cheese in this or they can't quite put their finger on the flavour or ingredients. It's creamy, rich from the soup, with lot's of herbal flavour from the stuffing. It's comforting, especially for my husband who grew up with it. His mom grew tons of zucchini! They would eat this as a meal by itself or sometimes with chicken.
