How to make it

  • Cook squash, season lightly with salt and pepper.
  • Add the carrot, onion, pimento, soup and sour cream.
  • Pour melted oleo over the stuffing mix and mix well.
  • Add 3/4 stuffing mixture to the veggie mixture and put this into a buttered casserole dish.
  • Cover with the remaining stuffing mix.
  • Bake at 375 degrees for 25 to 30 minutes.

    I remember veg casseroles like this from years back - they always seemed to be part of potlucks and holiday dinners...and I remember how wonderfully delicious they were, with the mixture of veggies and the creamy sauce and the crunchy topping. Thanks for the great reminder - I look forward to making this one again!
