Croissants and Sausage Breakfast Casserole

    I`m gonna have to lead with....neither Hubby nor I are very fond of casseroles, or maybe I should say, we haven`t tried one yet that we`ve been overly pleased with; so when I came across a Breakfast Casserole recipe, I was quite happy, as I thought this would be a good idea to put forward for the IMI11 Casseroles Challenge and have a yummy breakfast at the same time. Plus....I recently had purchased some Jalopeno ground sausage meat which I was eager to try in a recipe so this fit that bill as well.

    If I were to make this recipe again, I`d use bacon and I`d really like to try it again. I`m afraid the sausage meat I used was WAY TOO spicy (and I like heat!). By the time I was 1/2 way through my slice I started to pick the sausage out because my mouth was on fire.

    I halved the recipe. It said that the entire recipe would feed 12-15 people. If it were served among other brunch items I `d agree, but if this is your stand alone breakfast, I`d change that serving amount to 8. Because I halved the recipe I used three eggs and two large croissants which was a perfect ratio for me. Instead of Half & Half I used evaporated milk and I only added maybe a half of a cup of old white cheddar on the top of the casserole as opposed to a cup full that was called for.

    Because my casserole dish was an 8 x 9 inch one, I pulled it out of the oven after 35 minutes. It had just started to brown on the top. It was totally cooked through. I probably could have left it in for a bit longer if I wanted it to be browner or crispier but I liked the look of it after the 35 min.

    Krumkake says you can make this the night before and keep it in the fridge until you bake it the next morning, and like I say, I would totally make this again if I had company here, as it would be so handy. It was quite rich and very filling.

    It was fun to try. Hubby said it tasted sort of like quiche and I`d agree with that. He said that if I hadn`t told him there were croissants in it he wouldn`t have really been able to discern them since they`re mixed up with the egg mixture.

    A neat foray in to the land of casseroles. :)

    Yikes, that sounds like some hot sausages!! Bacon sounds like it would be lovely in this, ham or back bacon would be nice too I bet. :)

    Great photos Janet! It looks ideal for breakfast especially if you are cooking for several people. Would be good too for a family making breakfast for dinner with a salad. I'd so do that!

    Dang, I don't think I've ever had breakfast sausage that spicy!! LOL!! I definitely don't see a 9x13 feeding that many people. Can't wait to hear how you like it with bacon Janet, I'm bookmarking this one as my family would really like it I think, but with bacon :) :)
