Easy Layered Salad

    Easy Layered Salad by Twill10

    I liked the sound of the dressing in this recipe so I had to try it. It has dill and mustard powder. On it's own it wasn't that flavorful but together with the salad it really complimented everything. And you need a thick dressing like this to hold up in the fridge and with the moisture of the salad-- so don't be tempted to thin it out (or add salt since the ham and cheese is plenty salty).
    This was a perfect way to use up leftover ham. In the recipe it says you can sub any leftover meat, like chicken, turkey, bacon or even canned tuna. And any greens and veggies you like. I used Romaine for the mixed greens, and used green onions instead of the red onion. I didn't use the tomatoes because the kids don't like fresh tomatoes, so I used red pepper instead. I think baby spinach would be a great sub for the mixed greens as well.
    I used a 2L / 8 cup capacity round casserole dish. My fridge was too full for my Trifle dish (it has a pedestal) and I wasn't sure it would fit in that bowl but it worked perfectly! I think my trifle dish would have been too wide around for this anyhow. I found there wasn't enough eggs and peas to fit the whole dish. The peas only went around the edge, so I think an extra cup of peas would fill in the center. I did cut the first egg rather thick, but I sliced the remaining eggs thin and only had enough for the edges. So next time I will add one or two more boiled eggs.
    I used 1 cup of shredded cheese for the inside of the salad and didn't bother adding the extra cup to the top. I don't think it needs it, but if you're a cheese lover go for it!
    The 4 of us ate this in one sitting as a side salad, though given the portions the men had I'd say it would serve 8 side portions! ;) But if adding more peas, eggs and cheese it would probably serve 12 sides.
    I think it would make a great lunch or dinner salad as well. I was thinking it would be great to layer and pack it in individual lunch containers as it would last in the fridge that way for a good week. And it's Delicious! :)

    Nice photo, Cosmicmother! I love layered salad! This is the first recipe I've seen that has a flavored dressing. Love dill! I haven't made layered salad in a long time. I used to make it a lot in the summer and we'd have it as a main dish like a Chef salad. I make it in a deep Rubbermaid container and get several meals out of it. It's so good that it's hard to stop eating.

    It is hard to stop eating it, Diz! We started with the salad, and the boys kept portioning more on their plates before they even put the main dish on their plate, LOL...we actually had diner leftovers for a change! ;)
    This type of salad is perfect for an Easter brunch Linda, that's when I usually make it. Back home I use to host an Easter egg hunt in my backyard when the kids were little, and our friends children, nieces and nephews would come over. Even the little kids would gobble it up. I think I converted all the children into being pea lovers with that salad, much to the parents surprise! ;)

    This is quite intriguing to me Shona. It almost looks like something my Mother would have made back in the '70's. :) I've never made anything like that but I bookmarked it on your recommendation. I think it would be a fun thing to bring to a Potluck. It would look pretty in a Trifle dish for sure.
