Fresh Tomato Pie

    *Made for the February 2020 "Red" Recipe Challenge"

    This is just like a margherita pizza, but with a pie crust!! I don't think I used 2 cups of mozzarella. Probably more like 1.5 cups. I really wish it was basil season, because fresh would have been wonderful, but I used dry which worked fine. I do not know how to peel uncooked tomatoes, but I think skin on was fine :) I would start checking your pie edges at about 18 mins. or so, especially if you cook at 400 the whole time. I actually cooked mine at 375 for the first 10 mins. then raised it to 400 for 15 more mins and the edges were nicely browned. So yummy and would make a great lunch or even cut into smaller pieces for an appy.

    Boil a pot of water. Make an ice bath in the sink. Cut an X on the bottom of the tomatoes and drop a few at a time in the boiling water blanching them. I forget how long to leave them in the boil but I'm sure it's for a few seconds. Transfer them to the ice bath. When cool enough to handle, the X will be rolling back on itself. Pick up the edges of the X and peel the tomato.

    I could also see this working with other herbs like thyme, marjoram, rosemary--or even a little balsamic drizzle too! ;)
    I also do what Points explained if I need to peel tomatoes or peaches etc. But I'd probably skip peeling the tomatoes in this recipe too. :)

    It's SO pretty! You did an awesome job on it Michelle. I NEVER peel tomatoes. The skin is where the most of the fibre is right? So I've haven't peeled tomatoes in forever. I like the balsamic drizzle idea Shona.
