Make It Yourself--Condensed Cream of Soups

    After years! And I mean YEARS of wanting to try this recipe out and just never getting around to it I DID IT!!!!! Hurray!!!! SOOOOOO many people have made this recipe of Keni`s over the years and rated it but I just had to do another one cuz I`m just so pleased. :)

    Make It Yourself Condensed Cream Of Soups

    I have to admit that I was pretty cynical that a home made recipe would actually have the taste and flavour of a Campbell`s soup. I grew up on Campbell`s soup. I use them a lot in recipes. But I`ve always hated the amount of sodium in them. It`s ridiculous. I know you can buy the sodium reduced ones but then they charge you more money. Shaking head.

    I buy my mushrooms in a large container from Costco but there`s just two of us and I have a really hard time using them up before they start to go funky. I was suggesting to my Hubby that I make us some stuffed mushrooms today for an appy and then use the remainder of the pkg. up in an omelette tomorrow but then he suggested a mushroom soup and that`s when....DING,DING,DING.....I remembered Keni`s Make it yourself Condensed Cream of Soups.

    I made 6 times the recipe so I could use all my mushrooms. LOL. The quantities of the ingredients are spot on. I used `Better than Chicken` bouillion dissolved in water for my stock and added just a wee bit more than it calls for on the label. I used a combo of one half 2% evaporated milk and one half skim milk for the milk (I think there is a `sweetness` to the Campbell`s soups and the evaporated milk helps with that for sure) and I went a little heavier on the amount of mushrooms too. (You know...just to use them up) :)

    Well....it`s downright FANTASTIC and I had so much fun doing it. Thanks to everyone for pointing it out to me over the years. I am going to freeze my six jars and pull them out as I need them. Both hubby and I gave it a taste test and we`re convinced. This is good stuff and as good a `Make it Yourself` recipe as I have ever tried.

    I looked at my `can` of Campbell`s Mushroom soup in the pantry and it contains 850 mg of sodium. My jarred `Cream Of` contains 350 mg. Kudos and loud applause Keni. LOVE IT!!!!!

    Awesome that you loved it Janet, I knew you would!!! Let us know how the freezing works out even though I think it will be fine :) Lol, love how you "X'ed" out the canned stuff :) :P I'm going to make this again during the holidays when I'm making casseroles calling for it. Can't wait!
