Maple Syrup Stuffed Mini Pumpkins

    A good flavor, vegetable and fruit mashed stuffed mini-pumpkins.
    I had an issue with the spec'ed times.
    Pumpkins needed an hour bake to make the sides of them a little squeezeable.
    Butternut squash and apples needed an hour too to soften up the middle of the squash.
    And the pepper could be cut in half.
    To be fair, my pumpkins were regulation softball size instead of the mini-pumpkins that are used for decoration. That was because the mini-pumpkins couldn't be purchased on my food stamp card.
    Use of a hand mixer tool couldn't get all of the lumps out of the mashed veggie/fruit mix.
    I used Granny Smith apples BTW.
    So I broke out the electric stick mixer to get a homogeneous look to the mash, as in the authors pic.
    It's a nice texture change when scraping out the pumpkin flesh while eating the mash. The pumpkin shell is hard enough to make it's own bowl for eating out of hand.
    Although I did entertain the idea of using the pumpkin flesh in the mash mix next time I make this recipe.
    Afterward the pumpkin shells can still be used for Halloween decorations.
    Did the final reheat at 30 to 40 minutes.

    WOW! Those look amazing, pso! They would be so pretty on the Thanksgiving table. I like this recipe from beginning to end. I have a quite a few butternut squash and mixing them with potatoes and apples sounds like a good way to get them used up.

    Reading over the instructions again, the use of the term "using a hand mixer" could mean using an electric stick blender instead of the manual potato masher that I first thought it meant. Makes more sense now in order to get that smooth mashed potato consistency.
    So that point of contention should go away in my review.

    I guess if they didn't say Electric hand mixer, that could mean a few different things? But she probably meant the electric hand mixer/egg beater thingy. I love my immersion blender and probably use that in this too :)
