Mom's Fresh Apple Cake

    *Made for the September 2018 Apple Recipe Challenge*

    SOOO..I'm finally getting around to reviewing this since I made it Monday. The cake part was fantastic! It was soft, and had great flavor and loved all the apple pieces. I ended up making the caramel icing over the cream cheese icing just because it was different and I make cream cheese frosting all the time for things. First of all it was A LOT of caramel, but since the recipe didn't say to not use it all, I just poured all on. It hardened up quite a bit pretty quickly, I guess I was expecting it to stay gooey? I had kept it on medium heat the whole 6 minutes, but I'm wondering if I cooked it too long, or if that was supposed to happen? Since it hardened up the caramel was cracking as I cut it. Anyway, near the middle of the cake is where the majority of the caramel went and it was just too much compared to cake. All tasted great, but the caramel is literally pure sugar. I would definitely try this again but with the cream cheese frosting next time, which I think would be AMAZING! Picture is awful, but it isn't too much of a photogenic food lol.

    It's too bad the caramel icing wasn't what you expected it to be. :(
    Since the caramel was a fudge recipe, I can see how it would harden quite quickly so I don't think you did anything wrong! Most caramel fudge icings would have a little icing sugar instead of marshmallow, allowing it to still harden but not as much as a marshmallow fudge.
    At least the cake portion was delicious!! And I bet that would be good with cream cheese icing, or regular vanilla icing too! :D

    Thanks Shona :) Lol, I have no idea how it's so dark? I baked it in a glass baking dish so maybe that? Okay, I see, so it is supposed to be hard-ish then. I guess the description of "caramel icing" through me off. I think a very thin layer of this would be better on top, but I am still trying it with the cream cheese frosting, because I know it would be delicious :)

    Lol, I thought maybe you added cocoa powder or dark brown sugar to it (by comparing the difference from your picture to the recipes' photo). But I just realized the recipe photo is from lilsweetie and not Sparrow, so it's probably just a random apple cake photo and not of the actual recipe.
    Please update whenever you make this with cream cheese! I'm always on the hunt for great apple recipes :)

    That looks fantastic Michelle and personally, I`d love to try a chunk of it with the caramel icing on it as it looks super yummy! My Mom used to make a Peanut Butter square with caramel icing and that looks exactly like your icing. NOM!

I see there is a note at the bottom that implies you have to beat it a long time to get a spreading consistency. Then spread fast. I make a peanut butter icing that uses almost identical ingredients: white sugar, evaporated milk, peanut butter, and marshmallows. It's only boiled 2 minutes before adding the marshmallows and then quickly poured over a warm cake. It is a gooey frosting that stays gooey and shiny. No beating required. Wonder what would happen if you tried that method with this?

    Thanks Janet, we really did like the caramel topping, it was just so much compared to cake. The piece I took a picture of was of an outside piece, the inner pieces had about 50/50 caramel to cake. So obviously my cake sunk in the middle lol! Your Mom's peanut butter squares sound delicious!

    DIZ, I think cooking for less would maybe work better for a gooey icing. Too cool that your recipe also uses marshmallows also, I was surprised those were in the icing to begin with lol :)

    Looks Good Michelle! I too would like the cream cheese frosting better. Cake is usually sweet enough and the balance of a cream cheese frosting compliments better. Bet it's good just on it's own.

    So glad you made this! A favorite of mine from childhood. If it hardened to old fashioned fudge consistency then you made it right. If it was a gritty "pure sugar", then no. While very sweet, it does taste like caramel. This recipe is for my mom's old tube cake pan, which makes a tall cake. 9x13 cakes usually use much less frosting. When mom made it in a 9x13 she would put leftover icing in a dish for fudge!! She used to make double fudge at Christmas, caramel on bottom then her similar chocolate icing (also fudge) on top. This recipe is copied from hers, I will have to go back and see what notes I need to make. The photo from lilsweetie looks like the cake without icing.

    Diz that method may not work with this icing. Mom and dad got married in the 50s, and as a young bride she took years to get it to turn out. When I was little Mom would get tired of beating and bring the pan to Dad. He would put it on a hot pad on the ottoman and beat it the rest of the way! I always sat in the floor watching, so I could get a taste the very second it was ready! Lol

    Mine was more gritty, pure sugar Sparow. Does that mean it cooked too long? I followed the directions exactly, so I don't know if the medium on my gas stove is a little different than others? Anyway, regardless anything with sugar is still delicious, so everyone was happy lol :) I love the story of your Mom and Dad making this, so cute!
