Moms Fresh Apple Cake With Caramel Icing Or Cream Cheese Icing Recipe

	Sparow64 / All my dishes 6 months, 2 weeks ago Love this cake! Something I always request at Thanksgiving. I prefer it with the caramel icing. This is an old fashioned icing recipe, doubles as mom's caramel fudge. I remember Dad helping her beat the icing every year. Prep:25m Cook:40m Servings:18	Sparow64

Ingredients

CAKE:

3/4 c butter

2 c sugar

2 eggs, well-beaten

2 c flour

1 t salt

1 1/2 t baking soda

2 t. cinnamon or allspice

3 c diced apples

1/2 c pecans

CARAMEL ICING:

2 1/4 c firmly packed brown sugar

1 small can evaporated milk (2/3 c)

1 stick margarine

10 large marshmallows

CREAM CHEESE ICING:

8 oz cream cheese

1 box powdered sugar

mik to moisten

1/4 t vanilla

Mix together

Directions

CAKE:

Cream butter & sugar until light and fluffly

Add eggs

Beat well

Sift together: flour, salt, soda and cinamon

Add dry ingredients to creamed mixture. Beat well.

Stir in apples and nuts

Pour into greased 9x13 pan. Bake at 350 for 40 minutes

CARAMEL ICING:

Bring sugar, evaporated milk and margarine to boil

Cook 6 minutes over medium heat, stirring constantly

Remove from heat

Add marshmallows

Beat to spreading consistency

Spread fast on cake, or turn into buttered dish for fudge.
