    Pumpkin Crumb Cake
    I had pumpkin left over for my Oct pumpkin challenge to made this cake.

    Boy I do not enjoy giving harsh reviews but while I loved the texture and flavour of the cake I did have a couple of issues with the crumble and instructions. Oh I do know how to bake a cake so that is what I did rather then mix the ingredients together.

    Yes I will be making again for sure. May try a cream cheese frosting which I will add some pumpkin spice. Also will check out other crumble recipes and see if it is either my used of large oat flakes or if there is something missing.

    Your right Nadine, most cake recipes don't just dump everything into a bowl and stir, so I think you were right for doing it the way you did. Your picture looks wonderful though!!!     Looks good, Nadine! I didn't know that was your photo until it was mentioned above. That's really different putting the crumb mixture on the bottom and top. Sounds like a scrumptious coffee cake. Too bad it didn't live up to expectations. I agree that a cream cheese frosting would be excellent.

    Not all cakes require creaming butter and sugar and beating eggs.This is one of those cakes where the baking powder is the main leavening. By adding all the ingredients to the bowl at once, and mixing with a paddle attachment or electric whisk beaters probably makes for a tighter crumb, more moist and sturdier to hold up to the streusel in the center of the cake. Rather than an airier cake with more volume.Try the dump method and see if you like it better! :)

    Your photo looks so good, Nadine! The instructions would throw me, too, and I'd be tempted to mix everything like you did using the more traditional method. As long as it tasted good enough that you'd make it again means it all worked out in the end :)

    Hi Cosmismother I think it just did not have the texture of either a streusel or a crumble. To me it just needed something. It did not ruin the flavour of the cake but it just did not make it over the top good. Yes I will try the way you suggested. LOL will probably be making it again very soon have had nothing but "I love that cake". The other thing is that the streusel is staying in place in the middle of the cake.

    Some of the best oat crumbles that I've had, have equal parts butter, sugar, flour and oats. I'm not sure how the extra butter would hold up inside the cake though? Maybe it needs a pinch of salt and some cinnamon to the topping as well :) Have fun playing with it, I'm sure you'll perfect it! :D
