Roasted Chicken Enchiladas With Poblano Sauce

    *Made for the 2019 January Casserole Recipe Challenge*

    I don't think I've made a white enchilada recipe for my family before. I was worried it wouldn't go over well, but it SO did!!! Well at least with my husband and daughter, my son would not go for the chopped poblano's all in the sauce. I'm not sure what size Luisa's tortillas were but I got 12 filled taco size, which is the normal size for enchiladas around here. To get ALL this filling (a whole chicken) into 4 tortillas would have had to be HUMUNGO tortillas lol!! I also used a mix of white chedder, sharp cheddar and monterey jack cheese. These were so good and happy that most of my family loved them :) :) Quickly taken and ugly picture, sorry!!!

    Just pulled 4 long dead B.I. chicken breasts out of the deep freezer. That should be enough to make this dish. Might be problematic finding poblanos.

    Will have to make this again at a later date. I used some rancid oil which flavored the dish too heavily. But it was fun roasting and peeling the poblano peppers.

    I’m here for questions. I don’t typically measure out chicken when making dishes, I eyeball and if I have extra filling, so be it - just put in ziplock and freeze for another time :-)
