Apple Cider Biscuits

    Was expecting more apple cider flavor but I didn't really even taste it. Good biscuit though! Homemade biscuits are SO easy and quick to make! So much cheaper than buying the can stuff, and they freeze well too! I liked the touch of the cinnamon on top. With a dab of butter these are great! I got exactly a dozen.

    Looks yummy! So glad you finally found apple cider in your store ;-) I never have luck with biscuits unless they're from a tube or with the help of a mix. I don't know why but so far have several failed attempts at from scratch... they never puff up right. Maybe I'll get it one of these days!

    Thanks! I do often have the same problem too DT with biscuits. I think it has to do with where you live, the humidity, the quality/freshness of your ingredients, all sorts of things. Baking is so iffy for me. I can make a recipe and it be great and make it again following the exact same directions and if be awful!

    Those look really great. I don't think I've ever tried to make homemade biscuits. Just the Bisquick kind, and I don't think that really counts. Something else I've been meaning to try to do besides sweet potatoes.

    I love fresh biscuits. I have never made them from scratch. Just the tube stuff. Yours looks soo good. I can picture butter melting over the tops. I wish I had some of those right now. Are you trying to use up your cider before it ferments into "hard cider"?

    I am trying to use it up. The exp is 12/22 on it so I still have time BUT I've made 3 recipes using it and its only like 1/4 gone! A gallon is going a long way! Apple cider isn't the cheapest stuff in the world so I don't want to throw any away.

    Squeeze your own cider. Run enough apples through a juicer to get twice the amount you need then simmer to reduce by half. The flavor will concentrate and you should be able to taste it in the biscuit.

    Quarter up some apples and simmer them with a little water in the bottom of the pan, covered. Use a potato masher to help break them up a little once they start to turn soft. Should take between 10 minutes to half an hour. Let cool and strain through a heavy cheese cloth or T-shirt remnant. Tie up hang and let drip to remove all the juice. Continue to reduce down the juice from there to concentrate the flavor.

    I'm with you ML2C. I tried these today and was hoping for more cider flavor. Actually, I might not have even guessed that it was in there other than the fact that I knew I added it! But the cinnamon sprinkled on top made for a wonderful aroma while baking... Maybe the "hard cider" that mr p is always talking about may lend more flavor... :)
