    Most of you know that balsamic isn’t my favorite. I made this with hubby in mind. He loves salads that are unique and paired with different flavors. I even did something daring with this first time recipe and invited a friend over for dinner. Gasp! Who knew this little salad would dominate the entire evening. Hubby loved it and our friend wasn’t leaving here until I gave him the recipe. For the dressing, I pulled out the good bottle of balsamic vinegar that is reserved for special occasions. One thing I always do with salads is serve the dressing on the side. Everyone agreed the dressing was the best part, but a little bit goes a long way. Just a few drizzles were all that was necessary. Long story short, I boxed up all of the leftover salad, attached the recipe, and sent our friend merrily on his way. Another keeper from Luisascatering! Here are the comments I left on the recipe:

    It's sweet enough that I drizzle it over salads straight from the bottle, so I know it will be great in this recipe. Saved!

    Hi, Bakerme! I remember you two talking about the better quality balsamic. That would work great for this because it says to use an "aged" balsamic. I just checked and the balsamic I have is also from Williams Sonoma! Someone gave it to me as a hostess gift. It's really sweet and thick like a syrup. I wouldn't use it in regular cooking, but thought it would be good on a salad. Must be because our friend sure raved!

    Thanks, Frankieanne! Gorgonzola is just another variety of blue cheese. I actually like it better. It doesn't seem as strong, IMO.

    DIZ, a friend used a crumbled white cheese in a salad that was very creamy and smooth, almost like cream cheese, and we loved it, but I don't know if it was gorgonzola or goat's cheese. What's the difference between the two?

    Bakerme, I don't know what your friend would have used. Gorgonzola tastes like a mild blue cheese. I would put goat cheese in the category with feta, but much stronger. I've only had goat cheese once and that was enough. A lot of people like it, but I thought it had a "stinky" goat taste. Will never eat again! I do, however, like feta.

    Frankieanne, I guess blue cheese is considered a stinky cheese. Gorgonzola tastes just like blue cheese. Most people would never know the difference unless someone told them.

    I love feta, and like only the mild blue cheeses. Cannot stand goat cheese though as much as I'd like to. Blech!

    Thanks, DIZ. I HATE blue cheese and feta and both, pardon the blunt description, taste (to me) like the taste left in your mouth after you've thrown up - yuk!

    I don't care for blue cheese. I had feta once because it was served to me in a salad and I was being polite. I thought it was pretty good but I need to try it again to make certain. :-P
