Bacon and Jalapeno Mac N Cheese

    Bacon Jalapeno Mac N Cheese

    Made this and turned it into a main dish by adding 12 oz of langastino and 8 oz of shrimp that I quickly sauteed before adding. This is quite delicious and a must try!! The flavor was spectacular! The jalapeno adds a just right amount of heat and is a great flavor addition. I must admit to making a few adjustments, more out of necessity than anything else. I had a mexican cheese blend, but my little one used it before I could, so for that I substituted 6 oz of Laughing Cow Queso Fresco/Chipotle wedges. It worked out great. I also added a little more bacon than the recipe calls for, but who can argue with that, right? Really great recipe!!

    we are mac and cheese snobs, if there is such a thing.... I have a stove top recipe posted, and that's how we always have it, just with various cheeses...we LOVE bacon and we love jalapenos, so I think it's about time to venture out ;)

    Always had luck with Sharebear's recipes, too...though, I'll prolly still change up the cheeses and just use her ideas, cus I don't use the processed cheese... I'll prolly review it and thank her for the idea, but not rate it... what do you all think?

    I think your fine doing what you said....like you said...just review it in your own way then don't rate it. Do leave a pic tho...cause we know that's always wanted no matter what ;)!

    and, I don't know why, but I never have a grainy texture to mac and cheese when using the freshly shredded... I never let the temp get too high, and I do add cream cheese with is a huge help with texture...and, I don't ever just use shredded cheddar... I like that in there for the sharpness, but I will always use an softer, more melty cheese, too.

    I'll add a pic...don't you worry about that! :)

    Ok, ok I do like a mix of cheeses in my mac including Velveeta. I think the cream cheese works the same as Velveeta for creaminess.
