How to make it

  • 1.In pan fry bacon until done. Remove and let cool, crumble into small peices.
  • 2.Follow directions on package to cook macaroni. Once done drain water and return macaroni to pan.
  • 3.Add milk, 3 tablespoons butter, cheeses', and spices to pan. Cook on low heat.
  • 4.In seperate pan heat 1 tablespoon butter. Remove stem and seeds from jalapeno. Add to pan and saute until tender. Remove from heat and set a side.
  • 5.Heat oven to 350 degrees. Once all cheese is melted in macaroni remove from heat. Place 6 ramekins onto baking sheet, divide macaroni between the ramekins. Top each with jalapeno and bacon peices. In a bowl combine bread crumbs and cojita cheese. Sprinkle mixture over each of the ramekins. Bake in oven for about 10-12 minutes until golden brown. Remove from oven and cool before serving.

    Made this and turned it into a main dish by adding 12 oz of langastino and 8 oz of shrimp that I quickly sauteed before adding. This is quite delicious and a must try!! The flavor was spectacular! The jalapeno adds a just right amount of heat and is a great flavor addition. I must admit to making a few adjustments, more out of necessity than anything else. I had a mexican cheese blend, but my little one used it before I could, so for that I substituted 6 oz of Laughing Cow Queso Fresco/Chipotle wedges. It worked out great. I also added a little more bacon than the recipe calls for, but who can argue with that, right? Really great recipe!!
