    This was a very good recipe. I think it could use some onions or garlic. Onions in that tasty sauce would have been delicious. I didn't use the Tapatio because I'm not into heat but I actually think a splash would have been nice. My pork chops were pretty thin so I only cooked them for 30 minutes and I didn't brown them because I didn't feel like cleaning another pan (hey, its Sunday! :D). Thickened up the sauce and served it with rice. Ate everything shown in the picture. I'm stuffed.
    Gave some plain rice to my doggie boy, Sammy. He wouldn't touch it. I put a bit of sauce on and he licked the bowl clean. Five stars from him as well. :)

    Yes, it was bit too much! I think that I would soften up the onions in the same pan that I would brown the chops in. Then pile them on top of the chops and then pile on the sauce. Sounds good that way!

    I made these again tonight but did things a little differently. I cooked my chops covered for 20 minutes and then uncovered for 15. That thickened the sauce up a bit so no other pan needed. A nice weeknight kinda thing! I still don't thing that today's pork chops need to be cooked for one hour. Mine were still nice and moist.
    My little Sammy guy is gone now. I sure miss you, happy Samster. :-(

    145F is the new standard for medium-rare for cooking pork unless it's ground. Helps keep the pork from being dry and tough.

    Today is actually the day my daughters hamster, Lucy died. Go figure Halloween. Anyway, big ordeal for her, ceremony before going trick or treating....everthing is just so ironic right now...

    Oh, that's too bad about Lucy. How long had she had her? I still remember when I was around her age and my parakeet died. So, it does make an impact. It is ironic - today being Halloween - to be having a hamster funeral. :-(
