  Didn't rate this recipe because I left out the zucchini ----- Duh-Oh!
  Loaf, as it is, has good flavor but not as tender as I'm used to with quick breads. Think it might be from beating the mixture well. Think it created too much gluten.
  It's very edible but could be a little more tender.
