    Recipe by Chef_irish: Basic All American Brown Gravy
    This recipe is already in the reviews profile but had no link.
    Added onion and 'shrooms to it this time. One small onion and 8 oz 'shrooms sauteed in 1/4 c butter with a pinch of salt added to each as they go into the pan.

    And it does smell like pie crust! Also look for a peanut butter color in the roux. The whole idea is to get rid of the raw flour taste. It works like blooming the flavors in spices by sauteing them in a dry pot until fragrant, or browning rice before cooking. A dark brown color is not good. Then the roux is too cooked and will not thicken into a gravy.

    Thought I had used a brown gravy over some meatballs once upon a time. Also posted a pic. Was looking for that recipe when I stumbled upon Chef_Irish's recipe and that was close enough. It's not really a "go to" recipe but it is very good.
