Basic Cake Mix

Recipe by Chefelaine: Basic Cake Mix
Another money saving recipe that works well.
Add 10 drops of whatever coloring in the liquid portion of your recipe to suit your cake.
This is quite a large recipe. I cut it down some for my purposes.
Already in the Reviews profile. Made a link to IMI group.

I'm getting confused about all the recipes marked by Reviews that don't look like they were ever actually made, but just rated. Lillian must have been having wine with ml2c. :)
I never knew you could make a basic cake mix. I guess it makes sense. I guess you can also tell by now I'm not much of a baker! :D I still haven't been brave enough to try more biscuits after my last two failures.

Pastry flour is sometimes hard to find. In that instance use 1/2 cake flour and 1/2 all-purpose flour to make the pastry flour.

Frankie, I was a *horrible* biscuit maker before trying a Taste of Home recipe I found in their old "Cooking for 2" magazine. Unfortunately, the magazine is no longer published, but the recipe is still on their site and I have copied the link for you below. I do change the recipe just a bit and we like it even better than the original. I omit the cream of tartar and use unsalted butter instead of shortening. They really are the best biscuits I've ever made. You don't need fancy pastry flour to make them, either. I have consistently good results with plain ol' King Arthur all-purpose flour. The recipe makes a small batch (it says it makes 4 biscuits, but I usually get 6), and you can have any leftovers for breakfast like my hubby does. He likes them with honey - not me, the real bees' stuff ;) Here's the link so you can check it out. I do hope you give it a try and let me know what you think:

Interesting recipe, Points. Did you find it a real time saver when making your cake, or would it have been just as fast to measure out the dry ingredients as you go? At least this mix doesn't have any artificial flavors or chemicals in it. Looking at the directions for making one cake, it calls for only 1 egg, which I would think gives it a cornbread/muffin-like texture. How did yours come out texture and tastewise?

Whoops, I just saw that your original post was a few years ago. So was Frankie's comment! I really need to pay more attention to the dates of the posts - LOL!

Thanks for the link to the biscuit recipe, Bakerme. I did end up making some biscuits after that post and had really good luck with these High As A Kite Biscuits. The one you use looks pretty easy!
