Beets Roasted In Wine

    These beets were fantastic! I do admit when I went to my red wine, I only had about half the amount called for so I reached for my white as well. Worked nicely. I would put these kinda in a dessert category for how sweet and delicious they are, perfect dessert for me! I even tried to get my husband to take a bite, because I thought they would change his thought on beets...but he wouldn't!! UUGGHH, what's with the bad rap on beets???!!!

    Believe it or not, I've actually have never peeled a beet. I've always roasted them whole and unpeeled in foil and then peeled them later after cooking. Is it like peeling a potato? Do you wear rubber gloves when you do that? I've heard its a good idea.

    It's a little harder than peeling a potato, more slippery and I never wear gloves, but I'm guessing it's said to wear them since it turns your hands (and counter, and cutting bored and sink when you wash your hands) bright red! Washes off eventually though...
