Boston Baked Beans

    Recipe by Kdbradley: Boston Baked Beans
    A good bean dish.
    Did a brine soak overnight instead of the quick boil method. Took 4 hours to simmer until tender.
    Baked in a 3-quart casserole dish covered with foil.
    Didn't start this dish early enough in the day as I had to turn the oven off 1 1/2 hours into the bake for a little sleep. Was going to finish baking off the extra liquid for lunch the next day but it seems the hot time in the cooling oven overnight was enough to thicken the sauce up nicely. So it looks like I saved an hour to two hours bake time by letting the beans sit in the oven overnight.
    Made some cornbread to go with.
    Thought the color and flavor were going to be a little light from taste testing before it went into the oven but it bakes up nicely.

    One Tablespoon of pickling/canning salt per quart of water. Rinse thoroughly after overnight soak.
