    A very good dish. I was confused on when the bacon is mixed in with the beans.

    Maybe I can get a picture on it a little later.

    After finding this recipe, I found two more that I'm going to have to try.

    I have made beans very similar to this before..

    You start by rendering 1/4 lb bacon or salt pork to get some fat in the pan I would chopped them. (His recipe is not to clear there)

    Add your onions when the bacon is almost done.

    The "strips" of bacon are laid on top during the last 1 hour of cooking. I usually use enough strips to pretty much cover the beans. Besides the flavor it helps keep the beans from drying out while the pot is uncovered.

    I did snip up the bacon and use the renderings to saute the onion. But then added the beans and water over top of the bacon and onion.

    I can do that. The recipe turned out well and a little more snipped bacon on top for the last hour of cooking could turn out quite well.

    You could Micro them for a minute or so then just lay them on top. You will have one nice looking pot of beans there.... Good to know the recipes worked.... ;-)~
