Braised Potatoes and Winter Squash

    To me, potatoes and rosemary are perfect for each other! I cut this recipe in half. I used mostly chicken stock with a nice splash of the apple cider. The cook time on this is pretty spot on. We really enjoyed!

    I like the idea of using apple cider, but since it also has wine in the recipe, don't you think apple JUICE would suffice? It looks like a very "comforting" recipe that really fits the season and it's something that I'd like to try...

    I think apple juice would work great or just use all chicken stock. It definitely would cut down on the acidity but it really wasn't that strong at all. Just taste as you go is what I did!!

    The first time I made it I used all chicken stock & wine, the second time cider & wine but a combo of all 3 is probably best. I think apple juice would be OK, too, GK.
