I've only ever done two things with Butternut Squash. Make soup or add it to a Curry Recipe, but now I'm pleased to say I've expanded my Butternut Squash Horizons.
This is a super yummy side dish. It was easy and tasty and a really nice dish for Fall. The onions added a really nice touch and the crushed crackers mixed with Parmesan Cheese sprinkled over top was the crowning glory. This will become one of my regular tried and true recipes. Thanks Pat! Totally five star worthy!
