Ingredients
  • 1 small butternut squash,peeled and cubed(2c)
  • 1/2c. mayonaisse
  • 1/2c finely chopped onion
  • 1 egg,lightly beaten
  • 1T sugar
  • Salt ansd pepper to taste
  • 1/4c. crushed saltines (8 crackers)
  • 2T. grated parmesan cheese
  • 1T butter,melted

Directions
  1. Place squash in pot,cover with water and bring to a boil. Reduce heat,cover and simmer 20-25 mins.
  2. Drain well,place in large bowl and mash. In another bowl,combine mayo,onion,egg,sugar and squash.
  3. Mix well,transfer to greased 1Qt. baking dish
  4. Combine cracker crumbs,cheese and butter. Sprinkle on top and bake uncovered at 350 degrees for 30-40 mins. or until heated thru and browned..

I have never cooked with or tasted butternut squash until tonight. I thought this recipe looked really good. I followed exact recipe (maybe added a little extra parmesan cheese) We were very happy with this recipe. My wife really loved it. Seconds for everyone! Thank you for such a good recipe for a beginner. Easy to make. Maybe next time I'll double the crust. 5 stars! I took a picture to upload if you don't mind.

This is so very good! I made this exactly as written. I love the contrast of the creamy insides and the crunchy topping! If you didn't know it was squash, you would think it was a very light, cheese souffle! I actually told my teen daughter it was that...and she totally believed it!!! She even asked for a second serving! I'm thrilled that I got her to eat squash!!! Yay! I'll be making this often! I added a photo.

All fixed up and ready for baking. I split the batch so I could send a casserole to the folks and kept tiny one for me. Mr. SuchAFuss believes vegetables are evil. Because I split it, I did add 4 more crackers. I also could not control the temptation to toss the smallest bit of nutmeg into the mash. It is beautiful and I"m looking forward to having that with dinner. Off to figure out which chicken will have the honor to go with the squash.


Don't faint, but I've never made butter nut squash! This sounds really good though. Is there a trick to peeling it? I take it butternut squash isn't one with all those seeds in it.


You got my five! That is totally yummy. I'll be making this one again. I'm holding back from seconds so I can enjoy it again tomorrow.
