  Tripled the recipe so as to use all of the squash. Didn't see any trouble as it was all precooked 'cept the eggs. Fit it into a 2.5qt casserole dish.
  Next time I will saute the onion first. Personal preference. The raw onion does give the dish some texture. Has a nice sweet savory flair as is.
  Used Miracle Whip instead of mayo.
  Mother requested I leave her some for seconds.

  Butternut squash is in the store year round. Buy one with a thick neck to make prep easier.
  I got lazy on the pic taking. It looks exactly like the other pics.
