Buttery Baking Powder Biscuits

    Recipe by Krumkake: Buttery Baking Powder Biscuits#
    Good buttery flavored biscuit. Well risen. Couldn't cut my biscuit to 1 1/2", as it would stick in the handle of the biscuit cutter. Settled for 1". Doubled in height when baked.
    Varied from the recipe by using milk powder.
    Baked for 16 1/2 minutes to get the color of Krumkake's biscuits.

    Buttermilk is low on the PH scale (more acid). You might have to add some baking soda (more base) to balance the addition.
    I used powdered milk because I was out of milk. There are buttermilk biscuit recipes out there. Try subbing the powder in them first so your balance will be right. I think either the buttermilk powder or milk powder helps the biscuits rise better because of the way they are processed. It's all about killing some kind of protein in the milk that hinders the rising power.

    Thanks for the info on the PH scale for buttermilk. I checked it out and buttermilk creates more lactic acid than normal milk which is considered neutral. I will take heed when reading recipes for more proportionate values from now on. Thanks again.:-)
