Carrot Cake Oatmeal

    From DIZ3: Carrot Cake Oatmeal

    I don't particularly like oatmeal, but this sounded like a good way to dress it up. I used all lactose-free milk and made it on the stovetop, but that could have been just enough of a change to effect the final result. Maybe I should try it again and play around with the recipe.

    Hi, Bakerme! Sorry this didn’t work for you. I wouldn’t think cooking it on the stovetop would make a difference as long as you used the stovetop instructions for cooking the oatmeal. In fact, it might even work better because the carrots would cook more. However, omitting the yogurt would make a difference. I’m not familiar with lactose free products so I don’t know what you could sub. The yogurt is tart and makes you think it has cream cheese frosting. I’ll admit, it’s not sweet like packaged oatmeal, so maybe more sugar.? Feel free to tweak. I do all the time. My hubby likes twice the carrots, no sugar, and no milk. I like to add milk because the yogurt alone is too tart for my taste.

We don't like icky sweet things, so I know I won't add more sugar. Maybe the lack of Greek yogurt effected the recipe just enough?? Greek yogurt doesn't come lactose-free. Yoplait makes a few flavors of lactose-free yogurt, vanilla being one of them. Any time I make a recipe for the first time, I try to stick as close as possible to the recipe as posted so I give an accurate review. I think next time I may try quick-cooking oats, brown sugar, and the vanilla lactose-free yogurt. Carrot cake is a favorite of ours and I am anxious to have that same flavor in oatmeal :)

    If you have a favorite carrot cake, I’d go off of that recipe adding the same kind of spices, sugar, raisins if it has those, etc. I like my Grandma’s carrot cake and it’s very simple, just cinnamon and walnuts. I came up with this as a way to get my husband to eat more heart healthy food. It’s hard to get him to eat plain oatmeal and he doesn’t care for the flavored instant oatmeal because it’s too sweet and too mushy (as he would say). He likes his food to have some texture to it.

    I need specific recipes with detailed instructions since I'm not a good seat-of-my-pants cook or baker. I have to agree with your husband about instant oatmeal. After not having it for quite some years, I bought a box last year and neither my hubby nor I could finish our serving. It was disgustingly sweet and we threw away the servings in our bowls and the rest of the unopened packages in the box. I will give your recipe another try and let you know what happens. Fingers crossed!

    Hi, Bakerme. You can't change the star rating,unfortunately. I made a mistake in a recipe one time and gave it a three star rating. After I discovered my mistake, I went back and left a new comment. That's about all you can do.

    Thanks, Frankie, but it won't let me leave a new comment. When I tried posting a new review, it disappeared and a message popped up that says "You already rated this." I tried several times before I finally just added my update to my original review and stated in there that I thought the recipe is worth more stars. Lesson learned for next time.

    Thank you. We really liked the oatmeal for breakfast today, and I printed out the recipe for my tried and true recipe file so we can enjoy it during cold winter months coming up.
