How to make it

  • In a microwave safe bowl, combine oats, carrots, sugar, and cinnamon. Stir in water. Microwave on high for 3 minutes. Remove from microwave and let sit 3 - 5 min. Stir in walnuts and yogurt. Add milk if desired and enjoy.

    Very nice on a cool morning and a switch from eggs. I Used lactose, gluten free oatmeal,lactose free yogurt, So Delicious Coconut Cream for Coffee in place of water and almonds( don't have walnuts). The changes are because iam lactose intolerant, and it turned out creamy and delicious. Thank you DIZ3 for the recipe.

    I don't have a microwave, so maybe making this on the stovetop doesn't work well. That and leaving out the yogurt since we have lactose issues here may have effected the result. It sure sounds like a good way to make plain ol' oatmeal more flavorful, so I may have to play around with the recipe to see if I can make it work for us. Added to IMI group on 10-3-2015: Carrot Cake Oatmeal UPDATED 10-5-2015: I was disappointed that this recipe didn't seem to work for me the first time out, but I made it again this morning with a few changes and we really liked it. It is very forgiving and can easily be tweaked to suit your personal taste. Using quick-cooking oats (*not* instant) made it creamier, something we liked better than the coarser texture of the old-fashioned. Cinnamon, to taste, and vanilla lactose-free yogurt really made it taste like carrot cake with cream cheese frosting! For someone like me, who doesn't really care for oatmeal, it was a great way to eat a healthier breakfast. For someone like my husband, who loves oatmeal, it is a definite make again! Thanks, DIZ3, for sharing your recipe! I can't get the star rating to upgrade, but this is now a solid 4 in my tried and true file.
