Chicken And Cilantro Quesadillas

    Made these last week and loved them! Wish I had an Anahiem chili but I didn't so I used the canned diced green. I used Queso Fresco for the cheese and of course I used cilantro :) I let the tomatoes drain their juices on paper towels for about 5 minutes after cutting. Other wise they will make your tortillas soggy. Didn't have avocados so I just served with some salsa, yummy!!

    Thanks Ladies :) I think sprinkling the tomatoes with salt after putting them on the paper towels gets out even more moisture, never tried it though...
