Chicken Eggplant Lasagna

    Recipe by Misahungry: Chicken Eggplant Lasagna No Noodles/saved
    It's a tasty and filling recipe.
    Pleased to announce I did have some adobo seasoning. Been setting in the lonely spot in the pantry for a while.
    Store only had family size spinach. So we'll be working on our Popeye attributes.
    Had several self-induced troubles but finally got it together in the casserole dish.
    Covered with foil for time and foil off for another 10 minutes.
    Didn't peel the eggplant.
    Home made tomato sauce from the last of our garden tomatoes.
    Used homemade Italian breading for the eggplant.
    Store bought Ricotta. Got lazy.
    It makes quite a plate full without slicing up the chicken and eggplant. Maybe I'll do that next time before it goes in the casserole dish.
    Plated it with some Simply Roasted Broccoli

    This looks SOOO good! It's okay to use premade stuff every once in a while, as much as I love a good homemade spaghetti sauce, I'm guilty of always having at least one jar of it on hand when needed :)
