Chicken Potpie

    I made Pointsevenout's
    Chicken Potpie
    last night for dinner. It was excellent! It makes a ton and it is very hearty. A great cold weather dish to warm you from the insides.
    I had made my broth a week or so earlier and taken the meat off the bones and frozen it to have on hand for when I made this recipe. I really enjoyed the variety of vegetables, the leeks are a nice addition and I was quite impressed with the thickening agent by using the flour and the milk whisked together. I was worried I was going to get lumps, but I didn't. Sauce came out lovely and smooth. Would also make a good base for Chicken a la King. The biscuits were good. Our phone rang just as I was pulling the Potpie out of the oven so it got put back in with the temperature shut off, for another 30 minutes and it still tasted good.
