Chicken Sausage Gumbo

    I saw someone had made this, and I checked the BETA list and did not see it.

    This is a fabulous gumbo!! I used chicken thighs, but if I would have used breast I would not have been comfortable simmering them for an hour. I probably would have cooked the breast then removed and added it back in at the end to heat through. The thighs worked out great in this long simmer time. For the smoked sausage I used deer and did not use the optional shrimp, although it would have been a great addition! Also switched out almond flour for the regular flour. This a wonderful, full of flavor gumbo! Served over cauliflower rice.

    That looks really filling. Great picture! I'm not certain I have had gumbo. I know I have never had okra. I've heard too many bad things about it. :) Do your kids like it?

    Oh that looks so hearty & good:) We grew up on fried okra, it's really good...I'm going to bookmark this and make it when our weather gets cooler:)

    Okra is delish! I'm not sure why some people wouldn't like it? We grew up eating it fried too :) My kids did eat this, but I had to add the cajun seasoning and hot sauce in after I made their bowls. I also did make them regular rice.
