Chicken Tacos With Pineapple Pico De Gallo

    Yay, we really liked this! The pico is fantastic and I plan on making it for fish tacos in the future as well. I used coconut oil to cook the chicken in and nixed the corn tortillas and used lettuce wraps. These would be great with a little Jasmine rice in them, if you feel the need to bulk it up. I thought I would be wanting a sauce or something, but the fruit pico is plenty juicy, so no need for it :)

    Thanks Joce!! I'm having a blast eating this way, and trying to figure out how to make recipes Paleo friendly. It's getting easier the longer we do it :) Now I just need to be able to work out so I can start seeing some good results, but doctor said not for 2 more weeks, no exceptions :(
