Chicken Thighs With Mustard Citrus Sauce

    The only change I made in this is to use chopped onion in place of the shallots. As much as I love shallots I hardly ever have them on hand :( I used a very coarse grain mustard as well, and squeezed my own orange juice. It does take a little time to get that sauce thickened, but it does happen, I promise ;) I served this over whole wheat couscous and it was super tasty! :) Topped with green onions for some color.
