Chinese Fried Shrimp

    I was very proud of the coating on these! It turned out light and crisp, and well, just perfect! These fry up quick so keep a close eye on them. We dipped them in a quick cocktail sauce I whipped up.

    Thanks so much for putting that here. Those look amazing! I even have an electric skillet. I'm always looking for an excuse to get it out so it doesn't lay away in the cabinet (like so many things!).

    I know what you mean! I have things that sit around like my waffle maker I've used once and got it last xmas. And my fondue pot I've used once and I got that one 4 yrs ago!

    These were soooo good. I cut this recipe in half easily. My mother has some chickens and a few little ones that lay little eggs, so it was easy for me to do that. My first time using peanut oil, too. I cooked up 13 shrimp and still had enough batter left for about five more! I wish I had thawed out more shrimp. I hope these reheat well because I still have a bunch left! I could only eat five. Added my picture to the recipe.

We usually eat at the dining room table but for quick or late dinner we eat at the b-fast table, so it's so weird I remember such details. Yours look just like mine! Light and fluffy coating! Glad you liked them!

    I think food is a great memory catalyst, ml2c. I clearly can remember a lasagne dinner I made for three good friends back in 1983, believe it or not! We had such a wonderful time and totally cleaned the lasagne dish up with bread. Ate the whole darn thing and had a blast. Whenever I make or eat lasagne, I think of that dinner. The friends have long moved away, but I still have that great memory. :)

    Wow 28 years ago (I was born in 83!) That does sound like a good memory! My mom hardly ever cooked (probably a good thing lol) so I don't have too many great memories around the table but I do plan to make some for my kiddos hopefully!
