Chipotle Appetizer Meatballs

    Made this a reduced heat snack. No adobo sauce in the meat or in the sauce and only one chipotle. No spicy tomato sauce.
    I can still taste just a little heat at the end, which is ok for the people I'm feeding.
    Used a knock-off brand of Frito corn chips. Can taste it in the meat which is a unique flavoring.
    Yes, I did use the Cotija cheese. It is a very salty cheese which disagrees with me, but used in this recipe is good. Was going to opt out for Parmesan. Now I'm going to have to find recipes to use up the rest of the block of Cotija along with the remaining chipotles.
    I don't know how to salt and pepper raw hamburger to taste, so I left the seasoning out. Turns out well even with the omission.
    Used a pound of hamburger and mild Italian sausage for the meats.
    For the sauce, Dijon mustard and 2 cups peach chutney.
    Baked at 12 minutes the meat is still a little pink inside, which is OK in my book.
    Threw it all in the crock for a couple of hours on LO.

    It is like an all-fruit. It has the main fruit chunked up along with some raisins, ginger, spices, sweetness, and a little heat too. It can be used as a jam or marmalade or jelly or all-fruit. It is a very thick and chunky consistency. It can come mild, medium, or hot.
    I like to put it on buttered biscuits in the morning. Sweet and sassy.
    Think of it as jam with an attitude.

    I have a tortilla chip casserole in the cue that I believe I'll use the remainder of the bag of Fritos (knock-off brand) instead of the tortilla chips.

    I use home made chutney. All I've ever seen in the store is mango chutney, Major Greys brand name.
