Chorizo Stuffed Poblanos

    This was exactly what I was looking for, a hearty filled pepper :) I had to make a few changes with the cheeses, used mascarpone for the cream cheese and queso fresco for the cotija. Oh also...almond meal for the bread crumbs, not sure if it worked the same, but everything held together pretty well. There is not salt in the directions and it is definitely not needed, salted perfectly on it's own. Very good served with a salad on the side :)

    Lol Points :P although I have made that chorizo recipe before and it is REALLY good, I had a couple of packs I had picked up at the Farmers Market a few weeks back...gotta support the locals!!

    Well, Costco isn't here yet, pso. They are planning on building one on Airport Blvd. but it hasn't happened yet. I don't really want one here. There is one 60 miles away and that seems close enough for me!

    From what I can tell, the chorizo has several variations on a recipe from hot to mild. And has a variety of meat. The disintegrating stuff is probably used to combine in eggs and such.
    I may have used chorizo once in a recipe but it's been so long ago the details are gone.

    Grocery outlet carries chorizo.

    Yes, ml2c, I need to go find the real stuff. I really need to put that on my list of things to do. I don't know what that disintegrating stuff is and I'm not certain I want to!
