Coconut Pineapple Loaf Cake

    Coconut Pineapple Loaf Cake by Valinkenmore

    This is delicious!! I love Coconut and Pineapple so this is a perfect combo. It's moist, tender, but not too crumbly and it slices up beautifully.

    I didn't bother toasting the coconut first. The coconut that goes on top of the loaf toasted in the oven and provided lots of flavour. I also didn't cover the loaf halfway through baking, so my loaf got a darker crust, but it didn't burn or get hard, so I think covering it only effects the color of the loaf.

    I used Unsweetened coconut, so the loaf isn't too sweet, it's perfect for a snack or breakfast. If you wanted to make this more of a dessert, I would reserve the pineapple juice, and make a powdered sugar glaze with it. I think I'll try that next time if I use unsweetened coconut!

    Overall, a great loaf that the kids and I loved!

    JoeyJoan, it was really quick and easy to put together! I beat all the wet ingredients in the stand mixer then stirred in the flour and sour cream by hand and folded in the pineapple and coconut, that way I knew I wouldn't over mix it. I was done mixing it all before the oven heated up, so very quick. Great idea on Easter dinner, this would be great with it!
