    Copycat Arbys Chicken Salad/saved

    This is one of the best chicken salads I have ever tasted! I followed the recipe to a "T" except added a little fresh squeezed lemon juice to the chopped apple and a little squeeze to the chicken as well...I usually always add a little lemon juice to fresh fruit when using in recipes:) Pecans were pretty expensive and just for a split second, I was actually thinking of subbing another nut, like walnuts..but I came to my senses and am so glad I did..the addition of pecans is excellent:) Thanks Bakerme for sharing your re-creation!

    I understand you eyeball your measurements but some of us are OCD about getting the recipe exactly right, unless there is some substituting going on. Well maybe it's just me.
    My inner obsessive self is screaming at me about the grapes.

    I'm pretty sure Bakerme meant to first chop the grapes then measure..that's what I did anyway..measured 3/4 of a cup and any leftover was for the cook:)

    Goodness sakes PSO:) I cooked my chicken breast first then chopped after it cooled, helps keep it from being dry:) I suppose you could cook the chicken as you usually do, cube or not before cooking:)

    This is definitely one I want to try! I admit I love Arby's SO MUCH! Their roast beef sandwiches with gobs of horseradish and Arby sauce is one of my favorites, along with the French dips :) I have never had their chicken salad though, your pic. looks so good Marie!

    FA, it's a milder,with just a hint of sweet, horseradish sauce:) Pretty yummy stuff:) We don't have an Arby's up here, but there's one in Chico on the way up the hill to our house..I'm surprised you don't have one!

    Points, I poach two Schwan's boneless, skinless chicken breasts (I think they're 4-5 oz. each), then cut them up for the salad. As I mentioned in my note, I just eyeball the ingredient amounts. As for the grapes, measure them first, then chop so you don't end up with so many grapes that you can't taste the other flavors going on in the salad, but really, just add all of the ingredients to taste.

    Frankie, you're going to have to cross city lines and get you some fast food! I'm not a fast food person myself, but love Arby's chicken salad. I'm happy that I can have it at home now any time I want. :)

    That is crazy FA, I agree with Bakerme, you gotta get you some fast food every so often, cross those limits! :) But then that would defeat the point of it being fast...hmmmm....things to think about. :P

    Michelle, yeah, I always feel a bit silly asking for horsey sauce when I go to Arby's:-D

    Bakerme, I love using fresh squeezed lemon juice when I can..it does brighten the flavors a bit! I made a lettuce wrap and loved it! The multi grain flat wraps would be perfect with chicken salad..Thanks for posting the recipe, I'll be making this often:)
