Corn Pancakes With Black Bean Salsa And Savory Sauce

    I made up the bean salsa earlier in the day to let the flavors meld, and for one more thing I wouldn't have to do later. I kept taking bites of it during throughout the day lol! It was delicious!
    I didn't have Mexican style corn so I used a can of regular and diced up a jalapeno to throw in. The cakes came out so pretty and perfect! Looked just like a pancake! The savory sauce added a perfect tartness that went well with the sweet corn. As you can see from the picture, I didn't serve everything on the side but just piled and drizzled on top! This makes A LOT of cakes, about 12, and they are filling so I think this serves more like 6-8 depending on if your eating it by itself or as a side dish to a meat. I froze mine for quick lunches.

    Oh I forgot to mention I didn't use turbinado sugar, just regular. I have never used turbinado, but I have seen it in the store.... I think the granules are bigger.

    With my leftover salsa, the next day I put it in a tortilla and just ate like that! Good stuff!
