Cornish Hens in Vermouth

    Cornish Hens In Vermouth By: Wolfpackjack
    I put the hens breast side down for the first 15 minutes at higher temp. Then turned for the remaining cook time, which turned out to be closer to 40 minutes. I also used some sea salt when seasoning the birds. Used smoked paprika b/c that's all I have, and love the stuff. I doubled the vermouth, lemon juice, soy sauce mixture and basted several times while it cooked. Overall we enjoyed this preparation. The flavors didn't really permeate the flesh as much as I would have liked. Photos added to recipe, not sure why it didn't take on here..

    Wow, they sure turned out pretty though! I've never cooked with vermouth before. It looks like a good mix of ingredients. I notice another reviewer said she didn't get the tastes in there either.

    This sounds awesome! I've never cooked or had vermouth at all! It's funny because my mom wasn't a big cook at home when I was little BUT she did make cornish hens every couple of months and I loved them!! Pretty pictures too!!
