Okay I have to say these are now tied with Spinach Chicken Enchiladas as being some of my favorite homemade enchiladas. I used some homemade enchilada sauce I had in the freezer, and corn tortillas. I did have a little chicken left over after 10 corn tortillas so I loaded up a whole wheat flour tortilla with the rest and threw it in there, which Michael ended up eating and stated that he thought the corn one's were better :) I cleaned out my cheese drawer making these and used mozzarella, cotija and a little bit of Mexican blend. Topped with chopped tomatoes before putting in the over. I ate 2 but could have easily eaten a couple more, they are just so good!!

Those look super yummy! I love enchiladas and I haven't had them in a long time. I love corn tortillas for enchiladas. That is what my mom always used so that is what I remember as being the best. :)

Yes, I have to say corn tortillas are definitely my fave too. Better for the waist line as well :) :) Wonder if a renovation is being made on the site.... I don't wanna get used to something new... waaahhhh.
