    I made this for dinner. This was so easy adn sooo full of flavor. I should have doubled the recipe as I have NONE left. I only had 1 can of rotel though. Oh, and I didnt have a green bell pepper so I used a yellow. I will be making this again. Seems my son is starting to eat as much as me. We fought over the last of it. He won : ) Besides, he still has some growing to do. Oh, and Frankie, Im glad that your instructions said to server over "cooked" rice. It might have been a bit crunchy otherwise. = ) Thanks for a great tasting recipe
