How to make it

  • Heat a large saucepan over medium-high heat. Add oil to pan; swirl to coat. Add bell pepper, sausage and garlic to pan; sauté 3 minutes or until bell pepper is tender, stirring occasionally. Add broth and tomatoes; bring to a boil. Stir in shrimp and beans; cover, reduce heat, and simmer 6 minutes or until shrimp are done. Sprinkle with parsley. Serve over cooked rice.

    Oh, I think I need to make this and serve it over gouda green onion grits....I got a grits cookbook for Christmas...this sounds delicious. I'm all for any recipe that calls for Ro-Tel.

    This looks excellent. I would use no salt crushed tomatoes and add a seeded serrano or a couple/three jalepenos instead of the chiles in tomato. Perhaps a bit more time for the flavors to meld before adding shrimp?
