    It's a good breakfast bake. I was doubtful at first as the ingredients didn't come near filling up the 9x13. BUT...........it filled out nicely during bake.
    Probably could use some salt but it has good flavor as is.
    Used Havarti cheese. Had a cup left over from another recipe.

    Using home made hash browns you would have to leave them soaking in water with a little vinegar or lemon juice or citric acid to keep those taters from oxidizing.
    Which reminds me that I rinsed the starch out of the hash browns in water with a little white vinegar added.
    Had 2 cups of these hash browns left over from making a mushroom pie by Keni and found a good spot for them.

    Wow, I like the looks of that. If it didn't fill up a 9x13 I am thinking it could be cut in half. I wonder if it would fit in a 10" square that way. Havarti cheese sounds great.
