"dancing" Beer Can Chicken

    Recipe by Sosousme: Dancing Beer Can Chicken
    Well flavored, moist and tender.
    Didn't use the rub spec'ed in the recipe as I have a couple dozen rubs in the pantry that I chose from. It was a Cajun rub, so should be pretty close.
    My first time doing a beer butt chicken. Did it in the oven at 325F for 2 hours. Came out just like the pic. Was afraid the bird would fall over once the meat started getting tender so I propped it up with wooden skewers for extra support. And I think the butt cavity clenched up on the can. Was forever getting it out. :)
    Served it with beans and cobbler.

    I make beer butt chicken all the time.....I would suggest oiling the beer can before putting the chicken on for easier removal. Works for me!!

    I've never cooked chicken this way and have always meant to but it was always grilled and I've never been certain my grill lid was high enough. Glad you did this in the oven, pso, and reported back. I'll try in the oven now.

    I have Wynne's Beer Butt Chicken on a short list. Although these days I havent been doing much real cooking. I hope to get to it soon tho. Ive alawys called it Drunken Chicken. Comes out so moist and is great cold

    I was worried that the beer would be too old to turn out a good result. Unfounded worry.

    Beer, Wine, Juice have a big day. So easy and always a crowd pleaser. I often use a cajun rub on the chicken as that is a family favorite. I keep Emerils Essence Creole Seasoning made up for just such an opportunity.

    BTW it is against all the regulations in the Brewers Guild by-laws to leave a beer undrunk for 10 years.

    Sorry but beer does have an expiry date!!! It has gone bad by now it won't kill you but and the only place for what is left is down the drain:( You can use a can of ginger-ale and you won't find much of a difference in this recipe. You could also use a soda can and pour wine, apple juice or chicken broth into it too!
